Super Simple Strawberry Sauce {no cook!}
Like every other growing thing here in the Midwest, the strawberries have been lagging behind, too. We went berry picking last week, at the start of this year’s picking season, when the strawberry season is normally winding down by the 4th of July. It was so hard to wait those extra couple weeks for sweet sun ripened berries!
But it turned out to be worth the wait. The strawberry picking was out of this world, the best we’ve ever experienced, and the most lovely bonus for our endurance of the long cold winter and spring. The berries were plentiful and a great medium size. They were perfectly sweet and juicy and oh so hard to resist.
And when we got our berries home, it was the same ol’ story… “What are we going to do with all these berries?!?!”
After eating MANY of them straight from our box of pickings, we filled the blender with strawberries and a few scoops of ice cream. Mmmmm…the sweetest ripe strawberry shake we’d ever devoured. Well, since last year, anyway. ;)
And the next thing I made was a fresh-from-the-field jar of Super Simple Strawberry Sauce. I wanted an easy, no cook sauce that tasted just like fresh squeezed berries. And, by golly, this quick sauce with just a few ingredients surely does the trick!
This homemade strawberry sauce, vibrant red with a bright and tangy taste, was the perfect mix-in for our morning yogurt. And it disappeared fast! So fast, that I didn’t get to try it in any of the other ways I had imagined…over vanilla ice cream or a piece of cheesecake…in lieu of syrup on waffles or pancakes…in fresh squeezed summer lemonade…oh my.
This can only mean one thing.
Yes, I’ll be making another batch!
Super Simple Strawberry Sauce {No Cook!}
What better way to celebrate summer than with a Super Simple Strawberry Sauce? Drizzle this sweet, no cook sauce over yogurt, ice cream, and more!
Ingredients
- 1.5 lbs. fresh strawberries, hulled
- 1 T. super fine sugar
- 1 T. honey
- 1.5 T. freshly squeezed lemon juice
- zest from 1 medium lemon
Instructions
- In a blender or food processor, combine strawberries, sugar, honey, lemon juice, and lemon zest. Blend until smooth, about 20 to 30 seconds. Strawberry sweetness will vary, so taste sauce and add more sugar or honey, if desired.
- Cover and refrigerate. Sauce will keep for up to 5 days. Swirl sauce into yogurt or vanilla ice cream, stir into lemonade, or drizzle over cheesecake, pound cake, waffles, or pancakes.

I think strawberry milk sounds great, Julie! I might reserve a portion without the lemon juice and zest added, though, for the milk…something about that sourness with milk doesn’t sound quite right. Let me know if you give it a try!
