It’s good to be known for good, special things…especially when it comes to food. And this Steak Seasoning Recipe has become our family’s signature flavoring when it comes to grilling up steaks for our friends and family. It’s our go-to for Grilled Ribeye when we’re hosting a special weekend dinner, as well as for grilled top sirloin during the week, a quick, protein-rich main for our family. It’s also great on Garlic Butter Steak Bites or ANY other cut of beef that you like. You can’t go wrong!
Why This Steak Seasoning Is Our Absolute Favorite
This recipe was inspired by a grilled steak dinner prepared by friends more than 25 years ago. They used a local Minnesota grocery store’s blend, L&B Dry Aged Beef Seasoning. We absolutely loved it and went straight to Lunds & Byerlys to grab a jar the very next day. But then, several years ago, we weren’t able to find it in stock – so I knew it was time for me to create our own signature steak seasoning. It’s our favorite, here’s why:
- Coarse gray sea salt. Sea salt contains natural minerals which give it a more nuanced flavor. It also has that crispity-crunchity factor going for it because it has extra-large crystals. I ADORE those big salty pops of flavor!
- Toasted onion flakes. This is another li’l secret to a great steak seasoning. Rather than using onion powder or dried onion flakes, this recipe uses TOASTED dried onion flakes – and it makes all the difference in adding deeper flavor.
- Gorgeous “special” herbs. The blend of herbs here has a Provençal feel, with lavender buds and marjoram joining the more typical rosemary, thyme, and basil. Don’t worry, though, the herbs might be fancy but the flavor isn’t highfalutin’— it just adds a really beautiful, special flavor to your steak!

What You’ll Need
The freshest good-quality dried herbs and seasonings will give this blend the best flavor. If any of your dried ingredients are past their prime, with little flavor or aroma, grab some fresh ones. - Coarse gray sea salt – This is the main ingredient, and one that I don’t sway from, as it’s the same one used in the store seasoning that I set out to replicate.
- Black pepper – Grind this coarsely; the crushed peppercorns add pops of spicy warmth throughout the seasoning.
- Dried toasted onion – If you can’t find minced dried onion that’s toasted, you can toast it yourself in a dry pan set over low heat.
- Dried herbs – Fennel, marjoram, basil, thyme, lavender, and rosemary. Each and every ingredient adds flavor that makes this the special seasoning that it is. If you don’t have culinary lavender, I beg you to purchase some for this recipe – you can always use any left over to make Lavender Simple Syrup for the most lovely Lavender Latte!

How to Make Steak Seasoning
It’s easy as can be! Here’s what you’ll need to do.
- Crush larger ingredients. Use a mortar and pestle to crush the lavender, fennel, onion, and rosemary. This releases more of their flavor and helps them stick better to the steak.
- Combine. Add all of the ingredients to a bowl and stir.
- Store. Transfer the steak seasoning to a jar or other sealed container.

- Use it. Pat the steak dry, rub it with oil, then sprinkle or rub the seasoning onto it before cooking as desired.

Ways to Use Steak Seasoning
We’ll start with the obvious…
- Steak. Use this seasoning for ANY cut of steak.
- Chicken. The flavors here also work really well with chicken. Try adding it to my Chicken Breasts Braised with Hard Cider, Bacon, and Parsnips or rub it onto a whole chicken before roasting.
- Potatoes. This seasoning is FABULOUS with potatoes too. Sprinkle it on Grilled Red Potatoes or Roasted Red Potatoes. Or rub it onto the potato skins before cooking Baked Potatoes!
- Carrots. Roast carrots in the oven with a mixture of olive oil, a little honey, and this steak seasoning.
- Gifts. I like to gift homemade seasonings. During the holidays and summertime grilling season, I mix up an extra big batch and portion it into individual jars for gifting.
How to Store
I always store this steak seasoning recipe in a glass jar with a screw-on lid. If it appears that ingredients have settled, I give it a good shake or stir it before using.
The storage life for this seasoning will depend on the freshness of each of the individual herbs and seasonings you use. And keep in mind, this steak seasoning won’t spoil — it will simply lose flavor over time, just like every other dried herb, spice, and seasoning blend. A good rule of thumb is that dried seasonings are at their best for 6 months after opening them.

Ingredients
- 1 tablespoon coarse gray sea salt (I use All Goods brand "Mineral French Grey Sea Salt – Coarse", from Amazon)
- 2 teaspoons dried, minced (or flakes) toasted onion (crush a bit with a mortar & pestle, then measure 2 teaspoons)
- ¼ teaspoon dried rosemary (crush a bit with a mortar & pestle, then measure ¼ teaspoon)
- ¼ teaspoon dried lavender buds (crush a bit with a mortar & pestle, then measure ¼ teaspoon)
- ¼ teaspoon dried thyme leaves
- ¼ teaspoon dried basil leaves
- ¼ teaspoon dried marjoram leaves
- ¼ teaspoon coarse freshly ground black pepper
- ⅛ teaspoon dried fennel (crush a bit with a mortar & pestle, then measure ⅛ teaspoon)
Instructions
- Aim to have any larger-sized ingredients no larger than the coarse salt grains, using a mortar and pestle to crush if needed. Place all ingredients in a small bowl and stir to evenly combine.
