Pretty in pink, this frozen Pink Panther Mocktail is like a strawberry-infused piña colada!

We traveled with my side of the family to Mexico a few years ago for Thanksgiving. A week of nothing but pure sunshine, swimsuits, playing and relaxing; this was our first real tropical total-beach vacation. It sure didn’t take us long to settle into the groove of sand always between our toes.
This Pink Panther Mocktail is a delicious throwback to that vacation in Mexico, when our girls and their cousins were rarely without one of these cold, fruity drinks in their hands.

Our dear Tessa turns double digits this weekend, a monumental birthday (so I’m told). Tessa has always loved the beach. Combing for shells, making sand castles, and playing in the water, it’s one of her happy places. This picture was taken recently, while enjoying a beautiful morning on the beach in Aruba, when we cruised with Princess to the Panama Canal.
While we were away on that cruise, Tessa enjoyed plenty of frozen piña colada and strawberry daiquiri mocktails by the pool on the ship. I couldn’t help but reminisce about all the frozen tropical drinks that were consumed in Mexico.

Tessa and her cousin Meg enjoyed every single minute of Mexico sun, side by side, living from one Pink Panther Mocktail to the next. That all-inclusive package turned out to be a pretty sweet deal for those two!

To celebrate Tessa’s birthday this year, I’m featuring her favorite frozen drink from that week in Mexico. The resort we stayed at called this mocktail a Pink Panther. I know the drink was tasty, but I also think its fun name helped the kids love it even more!

The Pink Panther Mocktail incorporates the flavors of a piña colada – coconut and pineapple – with strawberry mixed in. So not only is it pretty in pink, but it’s extra delicious.

Pink Panther Mocktail
Ingredients
- 1 cup 1" chunks fresh, ripe, juicy pineapple
- 1 cup quartered fresh, ripe, juicy strawberries
- ½ cup chilled pineapple juice
- ¼ cup cream of coconut (such as Coco Real brand drink mix)
- ¼ cup freshly squeezed lime juice
- ¼ cup white rum, optional, for a cocktail with alcohol
- 2 cups ice cubes
- fresh pineapple, strawberries, and lime for garnish
Instructions
- Add fresh pineapple and strawberries to blender carafe, plus pineapple juice, cream of coconut, lime juice, and (optional) rum. Blend on high speed until completely smooth, about 20 seconds.
- Add ice cubes and process on high speed until completely smooth, about 30 seconds.
- Divide evenly between 2 large glasses or four smaller glasses, and garnish with additional fresh fruit. Enjoy immediately.
