Shrimp will shrink when cooked. Larger shrimp will give you the most succulent shrimp bites. Plus they're easier to flip on the grill!
Make the marinade: Combine the olive oil, garlic, jalapeno, brown sugar, and spices. Let shrimp marinate: Pour marinade over shrimp. Refrigerate for 2-3 hours. Add tequila: Totally optional!
Prep grill: Heat to medium-high. Skewers? Grill shrimp with or without skewers. Grill: Shrimp cooks very fast! For jumbo shrimp, this will only take a few minutes per side. They're done once the shrimp are nicely charred and opaque.
I also recommend a cold, refreshing margarita!
