This Whipped Lemon-Vanilla Bean Butter is super fluffy, easy to spread, and simple to make. It’s also delicious enough to be eaten with a spoon. I’m not even kidding.
Ingredients
¼cupmilk(set on counter 20 minutes before starting, to take the chill off)
1cupunsalted butter,softened to room temperature
¼cuppowdered sugar(sift first if lumpy)
2tablespoonsfinely grated fresh lemon zest(use a microplane zester)
vanilla beans scraped from half of a vanilla bean
1pinchsalt
Instructions
In the bowl of a stand mixer, with a paddle attachment, beat milk and butter on low/medium-low speed until it is evenly incorporated; this may take a bit.
Then turn speed up to medium-high and beat for about 5 minutes, scraping down the sides and bottom of the bowl a couple times, until light and fluffy.
Add remaining ingredients and beat again on medium-high speed for 1 more minute.
