For the Dressing
¼c.rice vinegar
2tsp.soy sauce
2tsp.sesame oil
1T.peanut oil
2T.honey
2tsp.finely minced fresh ginger
1large garlic cloveminced
1tsp.dry mustard
¼tsp.crushed red pepper flakes
kosher salt and freshly ground black pepperto taste
For the Chicken Salad
3c.cooked chickenshredded into bite-size pieces (Use a deli chicken for a quicker meal!)
1c.very thinly sliced carrot
½c.thinly sliced red pepper
2green onionsthinly sliced
3T.chopped fresh cilantro
For the Lettuce Wraps
1 to 2heads large-leaf lettuce of your choiceleaves separated
2tsp.black sesame seeds
Instructions
For the Dressing
Combine vinegar, soy sauce, sesame oil, peanut oil, honey, ginger, garlic, mustard, and red pepper flakes. Season with salt and pepper. Set aside.
For the Chicken Salad
Toss together the chicken, carrot, red pepper, green onions, and cilantro. Drizzle with the dressing and toss lightly to coat. Cover and marinate in refrigerator for at least 30 minutes.
To Assemble the Wraps
Spoon chicken salad into lettuce leaves and sprinkle with sesame seeds. Serve with your favorite peanut dipping sauce, if desired.
