Heat olive oil in a large pot or Dutch oven, sauté onion for 2-3 minutes, then add garlic and cook for an additional minute.
Season ground beef with salt, pepper, and red pepper, break it apart, and cook until browned and no longer pink.
Stir in the diced carrots and celery, and cook until soft. Then stir in the tomatoes, and let simmer.
Add the chicken broth and bring the soup to a boil.
Stir the dried oregano, basil, and marjoram into the pot. Season with salt & black pepper to taste.
