Mix the Wet Ingredients

Beat together the shortening, brown sugar, molasses, egg, egg yolk, and vanilla until light and fluffy.

Mix the Dry Ingredients

In a separate bowl, stir together the flour, oats, baking soda, cinnamon, and salt.


Slowly add the dry ingredients into the wet ingredients and mix until just combined.

Portion the Cookies

Scoop 2-tablespoon portions of the dough and flatten into disks that are 1/3″ thick.

Bake the Cookies
