Remove the roast from the fridge an hour before cooking. Dry with paper towels, then season with salt and pepper.
Brown the roast in a Dutch oven with olive oil, turning and browning each side, then transfer to a plate.
Cook the onions and carrots in the pot, stirring frequently and scraping the bottom of the pot.
Add the thyme, beer, broth and tomato paste. Then bring the mixture to a boil.
Add the beef back to the pot and place in the oven. Halfway through cooking, flip the roast and add the potatoes.
