What Makes This Pot Roast So Good?

This easy recipe is a hearty dish made with tender beef, potatoes, carrots, and onions in an incredibly flavorful, rich and beefy broth!

What You'll Need

You'll need beef chuck roast, potatoes, and a few other simple ingredients to make this easy recipe. Let's get started!

Prepare the Roast

Remove the roast from the fridge an hour before cooking. Dry with paper towels, then season with salt and pepper.

Brown the Roast

Brown the roast in a Dutch oven with olive oil, turning and browning each side, then transfer to a plate.

Cook the Veggies

Cook the onions and carrots in the pot, stirring frequently and scraping the bottom of the pot.


Add the thyme, beer, broth and tomato paste. Then bring the mixture to a boil.

Cook in the Oven

Add the beef back to the pot and place in the oven. Halfway through cooking, flip the roast and add the potatoes.


When done, the beef will break apart easily with a fork. Serve and enjoy!
