In a food processor, pulse the Nilla Wafers until they’re a fine crumb. Then add the honey, cinnamon, and salt.
Slowly add the melted butter. Then pulse until the mixture resembles wet sand.
Press the crust mixture into an even layer on the bottom and sides of the pan. Then bake for 10 minutes and set aside.
Mix the cream cheese, granulated sugar, sour cream, milk, and vanilla until light and fluffy.
Add the banana pudding mix, flour, and eggs, mixing on low speed.
Pour filling into crust and place the springform pan into a baking pan with tall sides. Add hot water until it's 1/2 inch deep.
Bake until the center just barely jiggles when shaken. Then allow the cheesecake to cool completely.
