First, combine the ingredients for the cheese filling.
Trim and de-seed the jalapenos, then stuff them with cheese.
Flatten the sausage and wrap it around the stuffed jalapenos. Sprinkle on some paprika.
Wrap each armadillo egg in bacon, and secure it with a toothpick.
Bake at 400ºF for 25-30 minutes, then brush with BBQ sauce and bake for another 5 minutes.
