My classic margarita recipe, with a savory-tart dill pickle twist. So much FUN!
Ingredients
lime wedge and Tajin seasoning,optional for rimming the glass
2 ouncespickle juicesee Notes
1½ouncesblanco tequila
1ounceorange liqueur(such as Cointreau, Grand Marnier, or Triple Sec)
1ouncefreshly squeezed lime juice
½ouncesimple syrupsee Notes
pickle spear and lime wheel/wedge, optional garnishes
Instructions
Glass Rim (optional): Add a couple tablespoons of Tajin to a small plate. Run the cut edge of the lime wedge around the rim of a glass, then dip the rim into the salt. Set aside.
Margarita: Add pickle juice, tequila, orange liqueur, lime juice, and (optional) simple syrup to a cocktail shaker. Add ice to half-full. Cover and vigorously shake for 30 seconds to perfectly chill and dilute the drink.
Add fresh ice to prepared glass and strain the margarita over the ice. Garnish as desired (I like a pickle spear + lime wheel/wedge) - and enjoy!
Notes
Pickles brand: I prefer to use Claussen Kosher Dill Spears for this cocktail. The pickles and juice have a fresh flavor that's light and bright - and the brine is nearly clear (just lightly green-ish), not tinted with food coloring. For a similar flavor profile, but with a stronger dill flavor, I recommend Grillo's Classic Dill Pickle Spears - and I add only 1½ ounces of pickle juice. To make simple syrup: Simply boil equal parts water and sugar on the stovetop (I usually use 1 cup each), and stir until the sugar dissolves. Then keep it in a covered jar or bottle in the fridge - it'll last for at least a month!
