1tablespoonsimple syrup(see Notes below)
4-6large fresh mint leaves, plus a sprig of mint for garnish
¾cupyour favorite ginger beer(see Notes below)
½cupclub soda
Instructions
Add lime juice, simple syrup, and mint leaves to a Moscow mule cup or 16-ounce glass. Muddle the mint a bit, to release some of the fresh mint flavor.
Add crushed ice to fill the glass about ⅓-full.
Add ginger beer followed by club soda.
Give a little stir to combine, then garnish with lime wedge and mint sprig. Enjoy immediately.
Notes
To make simple syrup: Simply boil equal parts water and sugar on the stovetop (I usually use 1 cup each), and stir until the sugar dissolves. Then keep it in a covered jar or bottle in the fridge - it'll last for at least a month!Ginger beer: We prefer a bold ginger beer that's not overly sweet. Our favorites are Fever Tree "Premium" Ginger Beer and Bundaberg Ginger Beer.
