Makes about 1½ cups of dressing. For a super-duper quick dressing: Grate the shallot rather than mince it. Then just combine everything in a jar, twist on a tight-fitting lid, and shake vigorously to combine and emulsify. The dressing won't be quite as silky-smooth as when using an immersion blender, but it's still great - and so quick & easy!
