This easy Jalapeño Coleslaw recipe features a crunchy mix of fresh vegetables. Tossed in a lightly creamy dressing that's flavored with tangy lime juice and earthy cumin, this simple salad comes together in just one bowl. Ingredients
Dressing
½cupgood quality mayonnaise
¼cupfull-fat sour cream
2tablespoonsgranulated sugar
3tablespoonsfreshly squeezed lime juice
1teaspoonfresh lime zest
½teaspooncelery salt
½teaspooncumin
½teaspoonfreshly ground black pepper,plus a bit more for sprinkling over the top of the coleslaw
Coleslaw Mix
4 cups shredded green cabbage
2 cupsshredded red cabbage
1cupshredded carrots
½cupchopped cilantro leaves, plus a bit more for sprinkling over the top
¼cupfinely chopped red onion
¼cup seeded and finely chopped jalapeno pepper (use more or less, to taste),plus a few jalapeno slices for garnish
Instructions
In a large bowl, whisk together all dressing ingredients.
Add the coleslaw mix ingredients to the bowl with the dressing, and fold to combine.
Serve immediately or after a rest in the refrigerator. I personally think it's best enjoyed after resting in the fridge for 30 to 60 minutes. Right before serving, fold coleslaw to combine. Then garnish with a bit of freshly cracked black pepper and chopped cilantro, and tuck in a few jalapeno slices - I like to give people a little heads-up that this slaw includes jalapenos!
