These Fudgy Chocolate Meringue Cookies are soft and chewy in the middle, with the most delightfully thin and crackly exterior!
Ingredients
4large egg whites
1c.sugar
12oz.semi-sweet chocolate chipsmelted gently and cooled to room temperature
1tsp.pure vanilla extract
1.5c.finely diced walnuts
Instructions
Preheat oven to 350° F.
Spray a baking sheet very lightly with non-stick spray and set aside.In the bowl of a stand mixer, beat egg whites, slowly adding in sugar, until mixture forms soft peaks. With a rubber spatula, gently fold in melted, cooled chocolate, vanilla, and nuts. Stir just until combined.
Drop by spoonful (about 1-1/2 tablespoon in size), 2 inches apart, onto prepared baking sheet.
Bake for 10 to 11 minutes. Remove from oven and let cool for 2 minutes on baking sheet. Remove to cooling rack to cool completely. These cookies are best on the day they are made.
