Ingredients
8large fresh mint leaves
4slicesfresh cucumberabout ⅛" thick (I use an English cucumber)
1slicefresh limeabout ⅛" thick
2ouncesfreshly squeezed lime juice
2ounceswhite rum
1ounceorange liqueursuch as Cointreau
1ouncesimple syrupuse more or less, to taste
3ounceschilled club soda
mint sprigscucumber slices, and lime slices - optional garnish
Instructions
To a tall glass, add mint leaves, cucumber slices, lime slice, lime juice, rum, and orange liqueur. Muddle everything together, crushing the mint, cucumber, and lime to release their flavor.
Add ice to the glass, then top with club soda. Give the drink a quick stir to combine.
Garnish with lime and/or cucumber slices. Enjoy immediately.
Notes
Make it spicy: If you like drinks with a kick, add 1 or more slices of fresh jalapeno to the glass in the first step. Muddle with the other ingredients and proceed with the rest of the instructions.Don't like rum? This drink is very good with gin!
