Cucumber and Tomato Salad with Creamy Herb Dressing

With fresh vegetables and a creamy herbed dressing, my simple cucumber and tomato salad is the perfect goes-with-anything side dish for summer!
Ingredients
2mediumEnglish cucumbers, sliced in half lengthwise and then sliced into ¼"-thick half moons
2cupshalved grape or cherry tomatoes
½cupvery thinly sliced red onion
½cupfull-fat sour cream
2tablespoonsgood quality mayonnaise
2largegarlic cloves, finely minced
2tablespoonsfinely chopped fresh dill
1tablespoonfinely chopped fresh mint
¾teaspoonMorton kosher salt
½teaspoonground black pepper
Instructions
In a medium bowl, fold together cucumbers, tomatoes, and red onion.
In a small bowl, stir together the creamy herb dressing ingredients: sour cream, mayonnaise, garlic, dill, mint, salt, and black pepper.
Pour dressing over the vegetables and fold to combine evenly. Serve right away. See Notes below if preparing ahead of time.
Notes
This salad has the best texture and flavor when eaten as soon as you finish making it.If you want to prepare the salad ahead of time, store the vegetables in one covered container and the dressing in a separate covered container, both in the refrigerator. Then fold the two together right before serving. Over time, the salt in the dressing will draw moisture out of the vegetables and give the dressing a watery texture.
