Ingredients
1½cupsall-purpose flour
2tablespoonssugar
2teaspoonsbaking powder
1teaspoonbaking soda
½teaspoonMorton kosher salt
1½cupsbuttermilk
2large eggs
½cupunsalted buttermelted and cooled
2tablespoonsfreshly squeezed lemon juice
1tablespoonfresh lemon zest
1cupfresh blueberriesplus more for garnish
Instructions
Preheat waffle iron according to the manufacturer’s instructions.
In a large bowl, whisk the flour, sugar, baking powder, baking soda, and salt.
In a medium bowl, whisk the buttermilk, eggs, melted butter, lemon juice, and lemon zest.
Add the wet ingredients to the dry and mix just until no large lumps of flour remain. Do not overmix.
Gently fold in the blueberries.
Grease waffle iron with melted butter or nonstick cooking spray and then add a scant cup of batter to the center of the iron.
Cook for 3-4 minutes, or until the waffle is golden brown to your liking. Repeat with the remaining batter.
Notes
To keep waffles warm (if you want to prepare all the waffles and then eat them all at the same time), place them on a cooling rack set over a baking sheet. Place in a 250° F oven for up to 30 minutes.
