What is Rouladen?

This flavorful beef recipe features fork-tender meat rolls stuffed with bacon, onions, mustard, and pickles, all in a rich gravy!

What You'll Need

You'll only need a few simple ingredients to make this easy recipe, so let's round them up and get started!

Prepare the Beef

Lay out the beef slices on a flat surface and gently pound them until they’re a little thinner than 1/4 inch.

Season the Beef

Season each slice with salt & pepper.

Spread the Mustard

Spread a tablespoon of yellow mustard evenly over each beef slice. Then place bacon slices on top of the mustard.

Add Pickles and Onion

Place sliced pickle horizontally on one end of each beef slice. Then sprinkle the chopped yellow onion over top.

Roll Them Up

Roll each beef slice tightly, starting with the pickle end, and secure with toothpicks to hold them together.

Cook the Rouladen

Melt butter and olive oil in a Dutch oven, add rouladen, and brown on all sides. Then remove and set aside.

Cook the Veggies

In the same Dutch oven, sauté the onion, carrot, celery, and minced garlic until tender.

Create the Broth

Stir in the soy sauce, beef broth, and tomato paste. Bring the mixture to a simmer.

Add the Rouladen

Return browned rouladen to Dutch oven, submerge in liquid, and cover. Simmer gently on low until tender.

Strain the Broth

Remove the rouladen and strain the broth and veggies. Return broth (without the veggies) to Dutch oven and let simmer.

Whisk in a Slurry

Mix cornstarch and water to make a slurry, and pour it into the simmering broth. Then remove from heat and add chilled butter.

Enjoy!

Place the rouladen in a large serving bowl, pour the gravy over it, and if desired, garnish with fresh parsley.
