Make the Base

Heat heavy cream, whole milk, and pumpkin puree in a saucepan until steaming.

Whisk the Egg Yolks

In a separate bowl, whisk together the egg yolks and brown sugar.

Combine

Pour half of the warmed pumpkin mixture into the egg yolk mixture, whisking constantly. Then pour back into saucepan until thickened.

Strain the Custard

Pour custard through a fine mesh sieve into a heatproof bowl. Stir in vanilla and pumpkin pie spice, cover, and chill in the fridge.

Churn the Custard

Once chilled, transfer custard to an ice cream maker and churn until it reaches a soft-serve consistency.

Freeze the Ice Cream
