This super simple Strawberry Sauce is an easy homemade recipe that tastes just like fresh squeezed strawberries!

Every June I look forward to picking strawberries from a local u-pick farm. It’s been an annual tradition with our girls since they were babies. And while Hatti and Tessa might not look forward to the picking as much as I do these days, I can usually still tempt them with the farm’s fresh strawberry donuts and milkshakes!

When we get home from picking, we eat those juicy, sweet berries to our hearts’ content. And then we always make a couple batches of strawberry freezer jam, plus strawberry lemonade and strawberry rhubarb crisp. And many years ago, I created this easy strawberry sauce.

This homemade strawberry sauce is vibrant red and, because it’s not cooked, it tastes especially fresh, bright, and tangy. It comes together with just a few ingredients and a little bit of time, and it’s super versatile.

Use this strawberry sauce for cheesecake and angel food cake – a most delightful fresh strawberry topping! Stir it into your morning yogurt topped with homemade granola, or into lemonade or your favorite cocktail. Spoon it over ice cream, waffles, pancakes, and crepes. The possibilities are deliciously endless!

All you need is a blender or food processor to create a smooth fresh strawberry sauce. Here’s how to make it:

How Do I Thicken It?

If you’d like your strawberry sauce a bit thicker, just add more strawberries. Because I created this as a no-cook sauce so it would taste as fresh as possible, I don’t like to add gelatin or cornstarch for thickening (which require cooking the sauce to incorporate).

If you like a little bit of chunkiness to your sauce, I would suggest to make the sauce as normal, then throw in some more strawberries and pulse a few times to blend just slightly. Leave some chunks!

Storing & Freezing

Refrigerator: Fresh strawberry sauce will keep well in the refrigerator, in an airtight container (I like to use a glass jar), for up to 5 days.

Freezer: You can also freeze this sauce. Just place it in an airtight, freezer-safe container and freeze for up to 3 months. Defrost in the fridge overnight before using.

Ingredients

  • pounds fresh ripe strawberries, hulled
  • 1 tablespoon super fine sugar
  • 1 tablespoon honey
  • tablespoons freshly squeezed lemon juice
  • zest from 1 medium lemon

Instructions

  • In a blender or food processor, combine strawberries, sugar, honey, lemon juice, and lemon zest. Blend until smooth, about 20 to 30 seconds. Strawberry flavor and sweetness will vary, so taste sauce and add more sugar or honey, if desired.
  • Cover and refrigerate.

Notes

Sauce will keep well in the refrigerator, in an airtight container (I like to use a glass jar), for up to 5 days.
