The Best Rhubarb Mint Mojitos

Rhubarb Mojitos are refreshing and so very pretty, perfect for any spring or summer gathering!

I like to think of this drink as my own little “farm to table” bevvy, as I always use rhubarb and mint from our garden. (But ANYONE can make this – find these ingredients at your grocery store or farmers market!)

Start with my Ruby Rhubarb Syrup, an easy-to-make rhubarb flavored simple syrup that keeps well for up to a month…which is very handy for an easy hot summer’s night cocktail here and there. Swirl this sweet rhubarb syrup into a gin & tonic or my Rhubarb Margarita – you’ll LOVE it!

Then complete the mojito with the classic rum and fresh lime. And top it off with some chilled club soda. This lightens the drink and adds bubbles, which definitely elevates this drink to the top of the refreshing summertime cocktail list!

What is a Mojito?

A mojito is a classic cocktail from Cuba that is typically made with white rum, limes, mint, and club soda. It’s a refreshing, bubbly drink with a citrusy-mint flavor that’s a little bit sweet – perfect for sipping by the pool and pretending you’re on a tropical getaway!

Beyond the classic mojito, there are a wide variety of flavor options. Oftentimes changes are made by adding a flavored simple syrup – like this Rhubarb Mojito I’m sharing today.

It’s also fun to muddle fresh fruit into the cocktail…think about fresh strawberries, raspberries, blueberries, or blackberries. Super sweet pineapple would be delicious. And ripe, juicy summer peaches would also be wonderful!

What You’ll Need

Make this refreshing summer cocktail at home with just 6 ingredients!

  • Mint leaves – Grab some fresh mint from your summertime garden or the grocery store.
  • Limes – Use freshly squeezed juice for the very best flavor. And then garnish the drink with a lime wedge or two!
  • Ruby Rhubarb Syrup – Gives the drink its lovely rhubarb flavor and pretty pink color. (If you don’t know much about rhubarb, check out my Rhubarb 101!)
  • White rum – Any brand will work; use your favorite. Bacardi is always a solid option.
  • Cointreau – One of my secret ingredients that adds some extra citrus flavor. If you don’t have any, and don’t want to buy it, just omit it – or squeeze a little fresh orange juice into the drink!
  • Club soda – Gives the cocktail a lighter body, with a bit of bubbly fizz. This also gives you a taller, less-alcohol-per-ounce drink.

How to Make Rhuharb Mojitos

Here’s how to make the perfect rhubarb mojito!

  • Muddle the lime and mint. Muddle the mint with the lime juice, to release the minty oils in the leaves. A cocktail muddler has grooves in the head that easily break up fresh ingredients. But a wooden spoon will work, too!
  • Add the remaining ingredients. Add the rhubarb syrup, rum, Cointreau, and club soda.
  • Add ice & enjoy. Add crushed ice to fill the glass. Give it a quick stir and then finish off the drink with a squeeze of fresh lime. Garnish if you like. And ENJOY!

Tips & Variations

Here are a few tips, plus a variation or two, for making this delightful rhubarb cocktail.

  • Use fresh ingredients. Since we’re only working with a few ingredients here, it’s important that they’re all ripe and fresh. This is especially true of the mint and lime. Trust me, you don’t want a mojito with mint that’s not fresh!
  • What rum should I use? Any decent white rum will work, there’s no need for top-shelf liquor. But, you don’t want to use the cheapest one either. When in doubt, a brand like Bacardi is great.
  • Do I have to use rum? A traditional mojito absolutely uses rum. But if you’d rather use vodka or tequila, I say go for it. As you can see from my Tequila Mojito, I like to challenge tradition!
  • Add some fresh berries. For a fun twist, muddle some fresh strawberries with the mint for a lovely strawberry rhubarb mint mojito! Also think about other berries, such as raspberries, blueberries, and blackberries. Peaches, watermelon, and pineapple would also be good!
  • Make it frozen. If you prefer your cocktails frozen instead of on the rocks, just add all of the ingredients to a blender and give it a whirl!

Can I Make This For a Group?

Absolutely. Since the simple syrup recipe makes more than you need for this recipe, it’s easy to scale this recipe for a big group. Just multiply the ingredients by however many servings you need and assemble it in a pitcher. If you won’t be serving it immediately, wait to add the club soda until just before serving.

Ingredients

  • 10 mint leaves
  • ounces freshly squeezed lime juice
  • 3 ounces chilled Ruby Rhubarb Syrup
  • 2 ounces chilled white rum
  • 1 ounce chilled Cointreau
  • 3 ounces chilled club soda
  • lime wedges for garnish

Instructions

  • *This recipe makes one drink, but the recipe for the Ruby Rhubarb Syrup will yield about 3 cups of syrup. Simply cut that recipe in half if you like.) 
  • Place the mint leaves and lime juice in a highball glass. Use a cocktail muddler or the back of a spoon to crush the mint and release its flavorful oils. Add the Ruby Rhubarb Syrup, rum, Cointreau, and club soda.
  • Add crushed ice to nearly fill the glass, and then stir just a bit to combine. Squeeze a fresh lime wedge over the top and add another wedge to the side of the glass for garnish. Enjoy!
