Warm summer weather calls for plenty of fresh beautiful berries and vibrant no-bake desserts. It’s a great summer motto to stand by!

So when I was asked to share a new recipe showcasing fresh seasonal produce and PHILADELPHIA cream cheese…I was so there! This no-bake dessert of Creamy Strawberry Fluff with Fresh Strawberry Sauce is a gorgeous and tasty way to end a summer meal out on the patio. Just watch everyone’s eyes light up when you hand them one of these jars to cradle in their hands!

One of the very best things about summer is fresh berries. And if I can kick that statement up a notch, I would replace it with “fresh picked berries”. Here in the upper Midwest, we are blessed with many opportunities to pick fresh strawberries, blueberries, raspberries, and so much more. Whether it’s picking them from your own garden, a local pick-your-own, or a farmers market stand…there is just no comparison to what you find at the grocery store. Fresh picked berries are such a sweet and spectacular treat!

It’s no secret that I love baking with PHILADELPHIA cream cheese. And I have a nice little collection of recipes that involves fresh spring and summer produce:

Creamy Strawberry Fluff with Fresh Strawberry Sauce {a no-bake dessert in jars!}

Ingredients

  • for the crust:
  • ¾ c. finely crushed chocolate cookie crumbs from chocolate sandwich cookies
  • for the fresh strawberry sauce:
  • 1.5 lbs. fresh strawberries stems removed and hulled
  • 1 T. super fine sugar
  • 1 T. honey
  • 1.5 T. freshly squeezed lemon juice
  • 2 tsp. lemon zest
  • for the creamy strawberry fluff:
  • 1 c. heavy whipping cream
  • 8 oz. PHILADELPHIA cream cheese
  • 1 c. prepared or homemade marshmallow cream
  • optional:
  • fresh strawberries for garnish

Instructions

for the crust:

  • Sprinkle 2 tablespoons chocolate cookie crumbs each into the bottom of six wide mouth half-pint jars. Set aside.

for the fresh strawberry sauce (see original recipe):

  • In a blender or food processor, combine strawberries, sugar, honey, lemon juice, and lemon zest. Blend until smooth, about 20 to 30 seconds. Strawberry sweetness will vary, so taste sauce and add more sugar or honey, if desired. You will only need 1-1/4 cups of this sauce for this recipe, and will have some left over.
  • Cover and refrigerate the remainder of the sauce, and it will keep for up to 5 days. Swirl extra sauce into yogurt or vanilla ice cream, stir into lemonade, or drizzle over cheesecake, pound cake, waffles, or pancakes.

for the creamy strawberry fluff:

  • In the bowl of a stand mixer, with the whisk attachment, whip the cream on high speed until stiff. Remove whipped cream to another bowl and set aside.
  • In the same bowl of stand mixer (no need to clean the bowl first!), with the paddle attachment, beat the cream cheese on medium-high speed until smooth. Add 1/2 cup of prepared fresh strawberry sauce and mix on medium speed until combined. Then add marshmallow fluff and mix again on medium speed until combined. Fold in prepared whipped cream. Reserve 1/2 cup creamy strawberry fluff for topping the finished dessert jars.
  • Divide remaining creamy strawberry fluff between the 6 jars, using a spoon or a pastry bag fitted with a large plain tip (I used the pastry bag technique). Tap jars gently on counter to settle in the creamy strawberry fluff. Top each jar with 2 tablespoons of fresh strawberry sauce. Top strawberry sauce with a bit more of the reserved 1/2 cup of creamy strawberry fluff, using a spoon or pastry bag fitted with a large plain tip. Garnish with fresh strawberries, if desired. Chill for at least 1 hour before serving.
