Summer and salads go hand and hand in my world. Salads make for lighter meals when the temperature rises, plus they allow for the addition of all the wonderful fresh seasonal produce. Being a girl who believes that variety is the spice of life, I’m constantly looking for new ways to eat an interesting bowl of greens. I refuse to waste my time on a boring salad!

Give me some tasty greens…crisp romaine and iceberg, tender butter lettuce, peppery arugula and watercress…I pretty much like it all. And the toppings and mix-ins are endless, from juicy berries and crisp veggies, to crunchy salty nuts and freshly snipped herbs. It’s all good to me!

But the one thing I’m trying to teach our girls about topping a salad is…“eat dressing with your salad, not salad with your dressing”.

Well, this Creamy Herby Summer Dressing is one salad topper that I won’t tell my girls to skimp on. Its base is made from Greek yogurt, and is sweetened only by a touch of pure maple syrup. Lemon juice lends some fresh tang. Mustard gives a little bite. And a bunch of fresh cut herbs round it all out very nicely. The dressing is super flavorful and can easily double as a dip for your fresh veggie platter, too. It’s just the perfect creamy (and guilt-free!) yum for your salads and veggies this summer!

Creamy Herby Summer Dressing

Yield: 1 cup

Ingredients

  • 1 c. plain Greek yogurt
  • 1 T. pure maple syrup
  • 1 tsp. freshly squeezed lemon juice
  • 1 tsp. dry mustard
  • ¼ tsp. onion powder
  • ¼ tsp. garlic powder
  • ¼ c. minced fresh dill
  • ¼ c. minced fresh chives
  • ¼ c. minced fresh cilantro or substitute parsley

Instructions

  • In a medium bowl, combine yogurt, maple syrup, and lemon juice. Add dry mustard, onion powder, and garlic powder, and stir.
  • Fold in the fresh herbs. Serve over fresh greens in a salad, or use as a dip for fresh veggies.
  • Note: The consistency of the dressing will depend on the yogurt you use. If the dressing is thicker than you desire, thin it out with a bit of water.
