Blue Cheese Popover Muffins {Harry and David giveaway}

Popovers are one of my all time favorite luxuries. When served hot and steaming, with a shmear of creamy butter or sweetened cinnamon honey butter…I beg you to find me anything more wonderful and comforting. And the best part? They are incredibly easy to make! Here’s my favorite no-fail recipe for basic popovers.

A few weeks ago, while we were enjoying a perfectly grilled steak, I wanted to reach for a popover and a hunk of blue cheese. But, alas, nobody had thought of adding those details to our menu. Nobody, as in “me”.

And then, after enjoying quite a lot of fabulous Rogue Creamery blue cheese while visiting Harry and David in Oregon recently, I suddenly had all kinds of inspiration to incorporate more blue cheese in my diet. Trust me, that cheese is something you NEED to try! (And if you scroll on down to the end of this post, you can enter to WIN some!)

So these Blue Cheese Popover Muffins were born. They’re baked in a regular muffin pan, so there’s no need to run out and buy a special popover pan (although I highly recommend a popover pan in your cupboard!). These popover muffins don’t rise and “pop over” the top of the cup like traditional popovers do, but they are moist, eggy, and completely delicious, just the same. With a crumbling of creamy salty blue cheese and a generous sprinkling of freshly ground black pepper, they’re just the perfect detail to add to your next grilled steak meal.

Blue Cheese Popover Muffins

Yield: 10 popover muffins

Ingredients

  • 2 large eggs
  • 1 c. milk
  • 1 c. all-purpose flour
  • 1/2 tsp. salt
  • 3 oz. blue cheese, crumbled
  • freshly ground black pepper

Preparation

Preheat oven to 450°. Generously spray a regular size muffin pan with cooking spray and set aside.

In a medium bowl, whisk eggs and milk slightly. Add flour and salt and briskly stir to incorporate. Do not overbeat. The batter will be slightly lumpy. Pour batter into 10 muffin cups, dividing batter evenly. Add blue cheese to individual muffin cups, dividing cheese evenly. With the back of a spoon, lightly dunk the cheese under the batter. Sprinkle top of batter generously with freshly ground black pepper. Bake 15 minutes. No peeking! Keep that oven door shut and the heat inside! Decrease oven temperature to 350° and bake 12 to 15 minutes longer, until deep golden brown. Immediately remove popover muffins from cups. If they stick a bit, just use a knife to circle around the edges of the individual cups.

These are best when eaten fresh and hot, with butter.

    Girl, these look AMAZING!! Oddly enough, I have a super old cast iron popover pan, so I am all over making these little treasures! And honestly, I have never paid much attention to Harry & David, that is until recently! Anything you are associated with must be worth checking out! Your trip there sounded ridiculous in the most excellent sort of way! I didn’t realize they had so many things to offer. I am totally paying attention from now on! Thanks for sharing the recipe!

      I just wish they still had a store close! It was so fun to shop in their Village store. You have a cast iron popover pan? Wow, love it! I have a couple popover pans that I really do prefer to use, but I get quite a few questions about making popovers, from people who don’t want to invest in the special pans. So I tried this. I did make this recipe in the regular popover pans and they rose very nicely still. So very nice to hear from you, Shawn – have a great weekend! :)

        Oh my gosh, I know, that would be so fun to have one local!! The pears…the cheese…it all sounds SO delicious! My Popover pans were from an old hotel that isn’t open any longer… They are great! Popovers are such a treat, and crazy easy to make too! (It’s just intimidating like a soufflé) I just had friends over last weekend for dinner and my one friend is a HUGE Blue Cheese lover and wish I would have had this to make for her! I am going to share your post on my Facebook wall and tag her so she can see it.     I’m actually from Oregon, although I’ve just moved to the Midwest for grad school. I was sent a box of their signature truffles one time, and they were FABULOUS. Blue cheese is one of my favorite treats, and this recipe sounds fantastic — I’d love to try theirs!

    Believe it or not, I’ve never had a product from Harry & David. I’ve heard such wonderful, glowing words about them that I can’t imagine anything I wouldn’t like. I think that a box of delicious fruit in a dark Minnesota winter would be wonderful.

    I send one of their healthy gift baskets to my elderly aunt each year, She can’t have “naughty” foods but she really enjoys getting Harry & David’s lovely fruits and a nice cheese or two. My grandfather always gets a small treat tower from me, as well. Good food gifts that anyone can appreciate, regardless of religion or dietary restrictions.

    I just LOVE their pears. They are the sweetest and juiciest I have ever eaten!!! My husband’s cousin used to send us a box for the holidays, probably some 20 years ago.
