With spring officially arriving last weekend, this house could pretty much assume that soup would be a rarity for a few months. I’m just not the kind to put a hot pot on the stove during the spring and summer, unless we have some unseasonably cool weather. My husband, on the other hand, would welcome a cup of hot chili or soup almost any day of the year.
But just as soon as spring finally decided to peek out, it disappeared.
Gone.
Nowhere to be found.
When we awoke Wednesday morning, it was to the broadcast of yet another winter storm warning. The midwest was cold and once again blanketed in snow. It’s been one heckuva white winter in these parts!
But you know the saying…“if you can’t beat ‘em, join ‘em”…
So I made soup!
I found this Lasagna Soup recipe in our local Kowalski’s Markets magazine, originally from the cookbook 300 Sensational Soups. I’ve always had good luck with recipes that Kowalski’s prints, but what especially caught my eye was that Chef Sarah Molten named 300 Sensational Soups as one of the top cookbooks of the year on Good Morning America’s Top 10 List for 2008. And one of the book’s co-authors is a local Minnesotan. I really felt the need to taste this soup!
The soup is truly like lasagna in a bowl. The flavors are lovely. And the cheesy concoction that gets hot soup ladeled over it in your bowl is yum! Kinda like this Chicken Tortilla Soup with its hidden mozzarella surprise. Only in Italian this time!
I substituted mafalda pasta for the recipe’s fusilli, because aren’t they just the cutest mini lasagna looking noodles you ever did see? I couldn’t resist!
And after picking up 300 Sensational Soups, I know I will be trying more recipes from this book. There are many calling my name.
But, next week, folks…I promise you’ll be seeing spring around here. Even if all I see outside is white.
Ingredients
- 2 tsp. olive oil
- 1-1/2 lbs. Italian sausage
- 3 c. chopped onions
- 4 garlic cloves, minced
- 2 tsp. dried oregano
- 1/2 tsp. crushed red pepper flakes
- 2 T. tomato paste
- 1 28-oz. can fire roasted diced tomatoes
- 2 bay leaves
- 6 c. chicken stock
- 8 oz. mafalda or fusilli pasta
- 1/2 c. finely chopped fresh basil leaves
- salt and freshly ground black pepper, to taste
- 8 oz. ricotta
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. salt
- pinch of freshly ground pepper
- 2 c. shredded mozzarella cheese
Preparation
Heat olive oil in a large pot over medium heat. Add sausage, breaking up into bite sized pieces, and brown for about 5 minutes. Add onions and cook until softened, about 6 minutes. Add garlic, oregano, and red pepper flakes. Cook for 1 minute. Add tomato paste and stir well to incorporate. Cook for 3 to 4 minutes, or until the tomato paste turns a rusty brown color.
Add diced tomatoes, bay leaves, and chicken stock. Stir to combine. Bring to a boil and then reduce heat and simmer for 30 minutes. Add uncooked pasta and cook until al dente. Do not over cook or let soup simmer for a long period of time at this point, as the pasta will get mushy and absorb all the soup broth. You may even want to consider cooking the noodles separately, and then adding some to individual bowls before ladling the soup over them. This would be an especially smart move if you are anticipating any leftovers. Right before serving, stir in the basil and season to taste with salt and freshly ground black pepper.
While the pasta is cooking, prepare the cheesy yum. In a small bowl, combine the ricotta, Parmesan, salt, and pepper.
To serve, place a dollop of the cheesy yum in each soup bowl, sprinkle some of the mozzarella on top and ladle the hot soup over the cheese.

I don’t do “chunky” tomatoes well, but I love the flavor they add to recipes and so I just put mine through the blender. And the “dollop” of cheesy yum at the bottom…I just don’t have words…HEAVENLY!!!

So if you dont like ricotta would cottage cheese work as a substitute?
Hi Jen! If you like cottage cheese in your lasagna, I’m sure that would be fine. But I think it would get loosened up in the soup, where the ricotta keeps more of a form. I might also try some fresh mozzarella, cubed. It would get melty and gooey with the hot soup.

I used 1 # spicy Italian sausage and 1# mild.
I used at least double the noodles and I didn’t add basil because I didn’t have any. And I didn’t salt and pepper it.

Oh my goodness…this soup was so good! My new favorite soup. Perfect for a damp Iowa night. I used turkey sausage because we had my parents over and they prefer to not eat pork or beef and it was delicious. I can’t wait to make it again. So delicious – thanks so much for sharing!

I loved this recipe and thought I would give it a try! It turned out to be a failed attempt because silly me used a slow cooker and the pasta turned to starchy mush! (oh well such is cooking!) but you gave me inspiration to make another themed soup! The rest of the soup still tasted fine so i pulled out the pasta and added corn and beans and turned it into a Mexican taco soup, which was very amazing! thank you for the inspiration my final modified recipe for Healthy Taco Soup is at (i credited you):

This is now our family’s absolute favorite recipe. It is delicious! It is quick, easy, and soooooo satisfying. One of my daughters is lactose intolerant, the other loves cheese. Having the cheese put in individual bowls makes this recipe work for both. The only modification I make to the recipe is that I use a whole can of tomato paste.

i made this tonight, but since my husband is not a ricotta fan i used some sour cream instead (about 4 oz)….SO good! and it had rave reviews from the 2 and 4 year old in the house too

I made a vegetarian version and it turned out delightful and tasty! I used faux sausage (usually I avoid fake meats but I knew this would need some ompf) and veggie broth. So tasty and perfect for the cold (relatively speaking, I’m in Texas) weather.

Hi Debbie! My girls don’t like much for heat, and they never complain about the amount of red pepper flakes in this recipe. But if you’re unsure, just omit – it will still be great!
Has anyone ever tried ground beef instead of sausage?
Yes, I’ve been told some have tried that & liked it. We are actually making this soup today using a combo of half Italian pork sausage, half ground beef. I think you could use whatever you like, and it will be great. I personally really like the Italian pork sausage, but it’s a very versatile recipe. Hope you like it!

We tried this soup and absolutely love it! I am not a fan of chunky tomatoes so pureed them to solve that. I substitued mini farfalle for pasta and thought it worked fine. It’s a keeper! Thanks for sharing!

this was soooooo good…a few things i changed though…i only used a cup of onions, used farfalle pasta, and i couldnt find the fire roasted tomato so i used the garlic and basil tomatoes. i also like the on comment i saw that the person blended the diced tomatoes, ill probably do that next time. but still an amazing recipe, my tummy thanks you.

Found this on pinterest and I’m so exited to make it! Planning to do so for dinner tonight. I’ll be using ground beef since I just bought a bunch, hoping it’ll be an okay substitute!
I’m a huge fan of lasagna and soup so combining the two is a dream come true! This was heaven! I’ve shared it with everyone I could and already had a co-worker make it as well (she used ground beef instead and said it was just as delicious). Making this right now and SO excited!! One question, do you find that the noodles get soggy/overcooked when you reheat the leftovers? Do you suggest keeping the base and noodles separate for leftovers?

I just made this soup on Tuesday and didn’t have any issues reheating the pot on the stove on Wednesday or microwaving the rest on Thursday.

I am a huge soup fan (I even eat it in the summer here in Arizona when its crazy hot outside) and this is the best soup ever!! We’re not big on ricotta in my house, so I used cottage cheese instead and its still delicious. I’ve made it 4 times in the last 2 months and everyone loves it. Fantastic recipe, I’m so glad I came across it.
We generally do not like Ricotta either, but in this recipe…it is amazing!

Made this soup tonight and it was fantastic! I used a whole can of tomato paste, a little more red pepper flakes and added roasted red pepper seasoning. It had a kick but was mild enough for a 3 year old to eat… he gobbled it right down! Thanks!
This was very yummy! My kids liked it too. I accidentally put too much pasta in there so it turned out more like lasagna stew, but it was still great! I used cottage cheese as I’m not a huge fan of ricotta and it stayed together no problem. Scrumptious!

hubby and i thought the tortilla soup was wonderful. don’t know what tortilla crisps are but i cut strips of tortilla’s and placed them in the oven for about five minutes so they were crispy ~ probably close to the same thing. the only thing i added was about two cups of kidney beans for more texture. and the best thing? it was a hit with the children ~~~ well, two of the three liked it. the three year old had left over spaghetti. now what soup should i try next?

Yes, that’s correct. First the sausage is cooked for 5 minutes & then the onions are added to the sausage. It works great!
